She is putting out a bloom stalk, which I'm not a huge fan of, but it doesn't seem to be messing up her rosette shape. She will continue to divert her energy to that stalk if you don't cut it, but it's great to have if you're looking at cross pollinating for seeds, so we'll keep it on for you.
